Grease interceptor rules for Apache Junction commercial kitchens

Grease is the single biggest cause of blocked commercial kitchen drains, and interceptors exist to keep it out of the sewer system. In Apache Junction, installing one is not a discretionary improvement. It is permitted work with an inspection attached.

What an interceptor actually does

Wastewater from a kitchen carries fats, oils and grease in suspension while it is warm. An interceptor slows the flow and gives that material time to separate.

Grease floats and collects at the top. Solids sink and collect at the bottom. Relatively clear water leaves from the middle and goes to the sewer. The device works entirely on residence time and density, with no moving parts to fail.

Why a full interceptor stops working entirely

As the grease layer thickens and the solids layer deepens, the clear zone in the middle shrinks.

Past a certain point there is not enough residence time left for separation to happen, and grease passes straight through to the sewer line as if the interceptor were not there.

The device does not warn you. It simply stops functioning while looking exactly the same from the outside, which is why maintenance is scheduled by measurement rather than by symptom.

The widely used rule of thumb is to service when the combined grease and solids reach about a quarter of the total capacity. Waiting for a backup means the device has been ineffective for some time already.

Sizing, and the mistake that gets made at fit out

Interceptors are sized against the flow they will receive and the type of kitchen producing it. Undersizing is the classic fit out error, usually driven by available space rather than by the calculation.

Undersized units cannot be fixed by servicing them more often, past a point. If the residence time is inadequate at peak flow, separation does not happen regardless of how empty the device is.

What the maintenance actually involves

  1. Measure rather than guess.Check the grease and solids depths on a schedule. The quarter capacity rule needs a measurement to apply.
  2. Service on a schedule based on measurements.Once you know how fast yours fills, the calendar interval writes itself. Busy kitchens need this monthly or more often.
  3. Keep records.Inspectors ask for service records, and a documented schedule is much easier than reconstructing history.
  4. Train the kitchen staff.Pouring fryer oil down a drain overwhelms any interceptor. Waste oil goes to a collection container, always.
  5. Jet the line periodically.The interceptor protects the sewer, and the line between the sinks and the interceptor still accumulates. That section needs cleaning.

Taking over an existing space

A large share of commercial kitchen problems arrive with the lease. Assuming that a functioning restaurant means a compliant plumbing system is optimistic.

Check before signing

  • Whether an interceptor exists at all, and whether it was permitted.
  • Its size against the kitchen you intend to run, not the one that was there.
  • Service records, and whether any exist at all.
  • The condition of the line between the kitchen and the interceptor.
  • Whether previous work was permitted and inspected, or done informally.
  • Who is responsible for the device under the lease, tenant or landlord.

A camera inspection of the kitchen line before signing costs very little relative to what it can reveal. Inheriting a line packed with a decade of another operator's grease is an expensive surprise on week one.

The permit side, done properly

Interceptor installation requires a permit and a plumbing inspection in Apache Junction. The city operates trade permits through its permitting process, with some issued over the counter and others requiring review depending on scope.
